Controlled Beverage Cost & Operations Evaluation 

Conduct cost review and beverage security using perpetual inventory records, outlet beverage offerings / specialty menus and measure to sales, pouring standards, observe employee performance and training, pricing in register system against price list, banqueting cost review and sales, supplier evaluation, ordering /receiving / storage procedures, requisitioning policy and adherence, and more.  Create and cost review (theoretical to actual), show MOM (method of measurement) revenue and beverage cost, provide an operational overview, provide recommendations for each outlet on menu and product offerings, design training and periodic testing.

Objective:

Create a blueprint and help execute to maximize profit and guest satisfaction.
